Saturday Night Salad Stir Fry


Secret Ingredient:  Salad Mix

This recipe uses up the ends of the salad mix that is leftover at the end of the week.   The recipe finds a creative way to eat your almost-expired lettuce without wasting the greens.

Recipe:  Thai Peanut Stir Fry with Salad Mix
    
Ingredients
Greens:  salad mix (cut into smaller pieces if desired); 1/2 can bean sprouts
Noodles: ramen, soba or pad thai
Meat: chicken cut in small pieces; or shrimp.  Fried egg if desired.
Seasonings: Oyster sauce, Soy Sauce, Oil (olive, peanut or sesame), Peanut sauce, Red pepper flakes

Directions
Stir fry the meat and greens with the seasonings.  Cook the noodles separately.  Blend cooked noodles into the stir fry.  If desired, fry and egg. Slice and mix in to the stir fry.
